Grade 5+ beef marbling score (maximum of grade 4) and 58% or higher levels of oleic acid Grade 7+ beef marbling score (minimum of grade 4) and 55% or higher level of oleic acid Grade 8+ beef marbling score (minimum of grade 5) and 52% or higher level of oleic acid
